Yummy and Delicious Cupcakes!

To start, these cupcakes are SO delicious! Like seriously, melt-in-your-mouth-no-one-is going-to-believe-you-made-this-at-home delicious; and yet they are super easy to bake at home because let’s be honest we need these things to be easy and preferably take a short amount of time right? And… OH MY GOSH LOOK THE PINK FROSTING!!  Sorry, I just had to shout it because it’s so beautiful it hurts. What really makes this blush rose cupcakes shine is the pink buttercream. Making buttercream is one of the easiest things ever, you just need a little bit of patience (like 5 minutes top) and 2 ingredients. But, if those 5 minutes feel like an eternity you can always use store-bought frosting (it can be our little secret) and add a couple of drops of vanilla to make it taste more like something you whipped up.

How to Make the Icing Blush Pink

To make it pink (which clearly is the best part ever!) add 1 TINY drop of food coloring, really really tiny, half of what you think you need.

Food coloring is really strong, trust me, the first time I used it I ended with hot pink (think neon pink signs) cupcakes, cool? Definitely! What I was looking for? Not at all, so you know just use very little.

Blush Rose Cupcakes Recipe

Ingredients
1 1/2 Cup flour
3/4 Cup sugar
1 Tsp baking powder
1/2 Cup butter
2 Eggs
1/2 Cup water
1 Tsp vanilla
Frosting Ingredients
1/2 Cup butter
2 Cups sugar
2 Tsps vanilla
1 drop of pink food coloring

Directions: 

1. Preheat the oven to 350 degrees F. Line a cupcake tray with 12 cupcake liners.  In a bowl mix the flour, sugar and baking powder. Slowly add the butter and continue mixing until it resembles coarse sand.

2. Add the eggs, water and vanilla and continue mixing for 3 minutes or until the batter is shinny.

3. Divide it between the 12 cupcake liners.

4. Take the pan to the oven and bake for 15/20 minutes or until done.

5. Take out of the oven and remove from the tray and let them cool until they are no longer hot to the touch.

6. Meanwhile, place the butter on a bowl and whip it up for 1 minute, add the vanilla and the pink food coloring and continue mixing for another minute.

7. Slowly add the confectioners sugar and mix until fluffy. Take it to a pipping bad and decorate your cupcakes.

8. Serve and enjoy!

I saw so many powerful messages today from people sharing their "why" — the reason behind why they were there and standing as one of the "fringe". Here's a few reasons that I saw and heard: 

- Why? Because I want my child to grow seeing smiles and smiling
- Why? Because I miss my family and loved ones.
- Why? Because my lived experience tells me not to trust what is happening right now. 
- Why? Because I believe in our informed consent principles.
- Why? Because I believe in choice without coercion. 
- Why? Because I’ve lost my job as a healthcare worker. 
- Why? Because I’ve lost my business. 
- Why? Because I’ve lost my home. 
- Why? Because I’ve been injured. 
- Why? Because I think there’s a better way forward for everyone. 
- Why? Because I chose what I knew was best for me and I want everyone else to be free to do that as well. 

Everyone has a unique reason why, and it’s important to take a moment to recognize and acknowledge them. Now is the time. Let's come together and be united💛

I want to be clear: I am not trying to dismiss the I want to be clear: I am not trying to dismiss the loss and illness that so many have experienced from C. It has been an extraordinarily hard two years for many, many people, for all sorts of different reasons and it is not my aim to diminish any of them. What I am trying to express is that we are at a breaking point societally. 

If we continue to move forward with coercion, mandates, restrictions, and divisive passports based on fear (or a hope) then we risk setting precedents that we may not be comfortable leaning on in the future. We also risk dividing our society to such a degree that may make it difficult, if not impossible, to ever bring back together. Despite all of the debates, arguments, and comments made over the last few years, I do not believe that deep down Canadians want to live in a state of perpetual division.

If this is not the time to unite and end these mandates, when is? It is our systems that are broken, and they have been broken for a very long time. We all know this. Let's unite and fix them, and more together 💛

Creating our own peace ☮️

Nearing the end of 2021, one thing that Jer & I wanted to prioritize was creating our own peace. Life has been exhausting for the last long while and, like most people, our mental well-being suffered from the current state of Canada. We knew we needed to make some changes, add something to our lives to remove us (even temporarily, now and again) from the chaos that is now the “new normal”. So, we began making road trips around BC to find our very own home away from home. I feel immensely lucky to now have this remote sanctuary in our lives. It is somewhere we can go when life gets too overwhelming, somewhere we could live eventually if life continues to be overwhelming. In just the first few days here, I’ve already felt a shift in my mindset. I feel incredibly lucky to have this place and already it feels like home. 💖

2021, for many of us, was a year of growth. Some of it was painful, most of it inspiring, and all of it necessary. Sometimes growing means needing to shed the older versions of ourselves and sometimes that can be difficult or cause a loss in friendships or relationships. It can be challenging - believe me, I get it. But, anything or anyone who couldn't respect your growth then won't respect your future growth. While growth can be painful it is not nearly as painful as the dull consistent ache of feeling stuck.
